Most kids love to cook and bake with mom, and most moms love to cook and bake with their kids, but as there are only 24 hours in a day, and 36 hours of stuff to do per day, most moms don’t have the time – or energy – to follow a recipe step-by-step.
I always google a recipe, and as soon as I spot the words “sift”, “separate”, “whisk” or “leave to rest”, I re-phrase my google search to something which includes the words “quick and easy”!
I recently tried out some recipes and cheated my way around the step-by-step instructions. Some came out perfectly fine and were delicious. Others – well, I’ve learnt that you sometimes need to follow the instructions!
I know it sounds crazy, but I literally took the list of ingredients and poured everything together in 1 mixing bowl. No sequence, no separation of eggs, no sifting or whisking – only mixing it all together 🙂

In a mixing bowl, mix together all the ingredients except the eggs and cinnamon. Heat all the ingredients in the microwave until the butter/margarine has melted. Mix in the eggs and pour the mix into a heat proof baking dish. Bake at 180 degrees Celsius for 20-30 minutes. Sprinkle with Cinnamon and enjoy!Rice Pudding - Lazy Mom Cheat Recipe
